Dim sum -- Baozi

Dim sum (点心) is a variety of small Chinese dishes traditionally served in restaurants for brunch and often associated with Cantonese cuisine. As dim sum continued to develop, chefs brought in influences and traditions from other parts of China and it became present in other Chinese cuisines as well. For example, like the xiaolongbao, which originated in Jiangsu province, but has also become a type of dim sum. How to cook dumplings in 3 ways?

Starting with the photo I showed in my last post, do you know many cooking methods I use?

The answer is 5!

Dumplings are steamed, chow mein is stir-fried, cucumber salad is dressed, chicken wings are baked, and spicy popcorn chicken is deep-fried and stir-fried.

Now, do you know how many different ways of cooking Chinese food?

More than 20 ways! I' m not sure exactly how many cooking methods there are, because the amount reported varies from site to site and there are no official figures.

For dumplings, I usually use three methods.

1. Steaming. 蒸(zheng). I think this is the most convenient and healthiest way. 

All you need to do is put the dumplings in the steamer, wait for the water to boil and then wait for 15 minutes, then you can enjoy.

*tips: You can brush a thin layer of oil before you put the dumplings in to prevent them from sticking on the steamer.

2. Boiling. 煮(zhu). This is the quickest way. 

In winter, I usually choose to boil dumplings because when I eat them with the soup, I don't feel that cold. 

The whole process takes about 5 minutes.

You just need to put the dumplings in the boiling water and when the soup boils again, add cold water once. 

Repeat in this way three times and when the dumplings have all floated, they are ready to eat. 

*I like to add some seaweed, spring onions and soy sauce or salt to the soup for extra flavour.

3. Pan frying. 煎(jian).This is my favourite way to eat dumplings. 

With the crispy bottom and juicy filling, dipped a little of my preferred sauce, I could eat a lot!

But this method is a little more complex to ensure the meat filling in the frozen dumplings is fully cooked..

First, you need to pour a thin layer of oil and fry the dumplings for 2 minutes until the bottom of them is golden brown.

Then, pour in a small bowl of water that will cover the bottom of the dumpling, don't pour too much or it will become a boiled dumpling.

Cover with the lid for about 5 minutes and when the water is almost dry, they are ready to eat.


*Here is an interesting way to eat dumplings and eggs together as a pancake.

Once you have followed the steps above, which is when the water has almost dried up, pour the egg mixture down and sprinkle with the spring onions and black and white sesame seeds. Cover with a lid for 1 minute and you can eat it.
